Winter Warmer – Spiced Dumpling Soup!

Warm Up This Winter at Hunters Plaza with a Spiced Dumpling Soup!

It’s never been more convenient to shop at Hunters Plaza, and pick up ingredients from Woolworths  for a quick and easy dinner to keep the family cozy and warm this winter.

Ingredients

400 ml Coconut milk
4 tbsp Curry paste
1 tbsp Sesame oil
3 tbsp Soy sauce
1 tbsp Minced garlic
1 tbsp Crushed ginger
2 Bok choy bunches
12 Frozen dumplings (any flavour)
1/2 cup(s) Chopped coriander
1/4 cup(s) Chopped spring onions
1 tbsp Sesame seeds
1 tbsp Chilli flakes or chilli oil

Method

  1. Preheat the oven to 180°C. Chop and prepare your veggies.
  2. In an oven-safe dish (like a lasagne or roasting pan), mix the first 6 ingredients until the curry paste is well combined—no lumps!
  3. You can use any curry paste or dumpling filling you like, but red, yellow, or Penang paste works best.
  4. I prefer chicken or prawn dumplings—pork can be a bit strong, but feel free to experiment!
  5. Add your bok choy and dumplings to the dish and give it a quick mix.
  6. Bake for 35–40 minutes, or until it’s hot and bubbling. Make sure the dumplings are cooked through.
  7. Top with coriander, spring onions, sesame seeds, and chilli before serving.

Leftovers tip: It thickens up the next day, so we like to serve it with a bit of coconut rice.
